Right before Christmas, I discovered a cookbook, The New Best Recipe Reserve from the editors of Cooks Illustrated, that were sitting about my shelf permanently with no attention being directed at the amazing quality recipes inside. Lesson discovered. I made the best gingerbread cookies on the vacation, and thought to myself, “What else is certainly within?”. So, becoming the parmesan cheese head I am, I looked within the index under “cheese” and discovered “parmesan cheese straws.” “Hooray!” I thought. I’d just made some pretty decent collard greens for New Years, and was confident I was effectively channeling my internal southern belle. Cheese straws being a extremely traditional southern meals will be a ideal next project, correct y’all? Well, becoming from Michigan with New England parents and surviving in California, you could safely suppose that southern belle is really a bit of a stretch for me personally. Good thing the recipe was a brilliant easy, non-Southern edition, or I’d have had to de-camp to Savannah (a tiny illusion of mine, but that’s for another time…).
In any case, the version I made was a breeze – anyone can do it, also individuals who don’t find out where in fact the Mason Dixon Series is. Ready?
-One sheet of puff pastry, partially thawed. Place it, unfolded, on the sheet of parchment paper.
-1/2 cup of shredded cheese (the recipe calls for Parmigiano Reggiano, nevertheless, you could absolutely use Aged Gouda, Sharp Cheddar, or any drier/more aged cheese) sprinkled on top of the sheet of puff pastry with a little salt and pepper. Place another sheet of parchment paper at the top and work with a moving pin to press the cheese into the pastry.
-Flip the whole thing over and do it again with another 1/2 cup of parmesan cheese and move to press in.
-Cut into even strips having a pizza cutter or whatever
-Produce into twists and bake in 425 degrees for ten minutes, rotating halfway through for beautiful, puffed “straws.”
So, as I was researching this post, I came across this amazing web site Hoppin’ John provides spent A LOT of time researching the history of parmesan cheese straws. Works out, the recipe I just distributed to you isn’t officially a parmesan cheese “straw,” but more of a parmesan cheese “finger.” And Hoppin’ John, while complimentary regarding the fingers, won’t admit these to the lexicon of Southern parmesan cheese straws. I’ll not even commence to share with you the knowledge on his site, but I will tell you that real parmesan cheese straws are basically almond flour birthday cake, fat, parmesan cheese, and a little bit of spice – cayannne, etc. More like a savory shortbread cookie than a cracker. Consider it – it really is HOT within the South, and until lately, mozzarella cheese wasn’t really a thing that was produced there. A terrific way to protect parmesan cheese there was to bake it! Puff pastry simply won’t hold up in humid, hot weather. The very first Southern mozzarella cheese straw formula appears to have surfaced in 1861, and they haven’t gone apart since. And did I mention that they’re delicious? Crunchy and flaky, with a rich mozzarella cheese flavor that comes from a glass+ of mozzarella cheese, as well as the intensifying magic from the range. The addition of spice, either a lot of black pepper or cayanne, provides great depth of taste. Tastes great with Cabernet. Test it out for!
Oh mah famous actors and garters! If California by method of Michigan and New England makes you a Southern Belle after that I’m one too ;) (Tx, by way of New York and No Cal).
I love cheese straws but they are way to high in unwanted fat and carbs. Your recipe looks like it could be a better choice. I’ll try it this week.

And so, I thought the only real logical move to make was celebrate my like of Cherry Ripes, by causing a whole batch of No-Bake Cherry Ripe Balls. They are a little bit like Bounty Balls , however they have the most delicious cherry flavour from your glace cherries.
I also added in a few drops of green food colouring to give them a gorgeous cherry pop of color, but it’s totally your decision if you want to do that!
Now these balls can be left as is and they’ll be amazing, but in the event that you really want to add to the cuteness aspect, then you certainly must add a teensy-tiny little bit of chopped up Cherry Ripe to the top of each ball.
