Tips for poaching meringues:
Don’t allow the water to go above a simmer (water is simmering when just a few bubbles rise but burst just before they reach the top).
Avoid overcooking; about a minute per side should do it. When completed cooking, ovals should be gentle and airy, however, not sticky.
